As of Neos 5, the Noto Sans font was missing from Neos.css. This has been fixed for Neos > 5 with neos/neos-development-collection#4005. We therefore consider Noto Sans to be generally available again and use it as the default font again.

Hi Marvin, hi Sebobo,
with this patch, the package uses Noto Sans font as default font again. The font was temporarily missing in Neos Core, which has been fixed with this patch neos/neos-development-collection#4005.
