Let's Encrypt and Self Hosting => _APP_EMAIL_CERTIFICATE must be populated

💭 Description

Please add that you must add an email for _APP_EMAIL_CERTIFICATE in appwrite>.env to get Let'sEncrypt running on self hosted Appwrite 1.8.1 (DigitalOcean) installs. Didn't see it in docs. Thanks
